Semi-shade grown at Cau Dat farm, located in Lam Dong, Vietnam where the altitude is roughly 1,200 meters above sea level. 100% ripe beans are handpicked - Dry/Natural process to achieve complex winey and tropical fruity flavors because fermentation occurs inside the beans during drying process. - Will yield flavor profile including floral and tropical fruit with hints of vanilla when roasted at light or medium level. Have sweet aftertaste while retaining high acidity level inherent in Arabica beans.
HIGH QUALITY PROCESSING METHOD TO ENSURE CONSISTENT MOISTURE WHILE MITIGATING RISKS OF CROSS-CONTAMINATION OR MICROBIAL/BACTERIAL GROWTH - Drying on screen inside greenhouse: maximum temperature and environment control, no contamination - Raking daily to ensure consistent, even drying of internal and external surface coffee cherries - Sugar content and moisture checking daily - Modern hulling machine to remove the outer mucilage and husks of the cherries after drying process is complete
